i cant believe I am saying this but I had really good HOME MADE tofu tonight. Could never get it right in the kitchen before, always dry and crumbly. Turns out it IS the type of tofu you use. Well at least that is what I learnt.

My neighbor makes her own tofu, quite an interesting process she goes through. You use these little cedar boxes to shape it and add gypsum, which is a mineral from the ground I believe. Apparently it makes it firm, better than corn flour alone.

Man... I must have been listening that day...
